In the mornings, I sometimes plan to eat a healthy breakfast of yogurt and granola, milk and wheat cereal, or a bowl of oatmeal. But when I actually wake up, I feel much more tempted by a soft and crunchy Belgium waffle drenched in syrup or a slice of warm, sweet French toast topped with powdered sugar. In short, I want something warmer and tastier. But of course, breakfast is the most important meal of the day and should be a healthy meal rich in nutrients.
As a college student, I really don’t have much time to prepare breakfast in the morning, however, so when I discovered the miracle that is a microwave muffin, I fell in love. Sweet but not too sweet, warm, tender, inviting, and nutritious, these muffins are perfect for mixing up your breakfast menu.
Microwave Pumpkin Muffin from Hungry Healthy Girl:
Ingredients:
- 1 egg
- ½ cup pumpkin
- 2 tbsp. unsweetened vanilla almond milk
- 2 tbsp. ground flax
- ½ tsp. baking powder
- 1 tsp. pumpkin pie spice (or cinnamon)
- 1 tsp. pure vanilla extract
- non-stick spray.
Spray mug with non-stick spray. Mix all ingredients in mug. Microwave for 5 minutes.
Berrylicious Microwave Minute Muffin from Blogilates:
Ingredients:
- ¼ cup of instant oatmeal
- 1 handful of blueberries
- 1 tbsp soymilk or almond milk
- brown sugar to taste
Mix all ingredients in a mug and microwave for 1 minute to 1 minute and 30 seconds. The muffin should pop out of the mug when you flip it upside down.
