Healthy No-Bake Cookie Alternative Kids Will Love

Sometimes you feel tempted to pack that homemade chocolate chip cookie into your child’s lunchbox to show you care, but then you pack that bag of carrots he will never eat instead. With these healthy homemade energy bites, you can show your love while encouraging your kid to eat healthily. Or, it might be the middle of the day, and you need a pick-me-up. You don’t have time to go out to buy a healthy snack, so you go for that office dessert instead. We’ve all been there.

Try making a batch of these healthy no-bake energy bites from Gimme Some Oven. Fast, simple, and nutritious!

Ingredients:

  • 1 cup (dry) oatmeal (I used old-fashioned oats)
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flaxseed or wheat germ
  • 1/2 cup chocolate chips (optional)
  • 1/3 cup honey
  • 1 tsp. vanilla

Method:

Stir all ingredients together in a medium bowl until thoroughly mixed.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls of whatever size you would like.  (Mine were about 1″ in diameter.)  Store in an airtight container and keep refrigerated for up to 1 week.

Makes about 20-25 balls.
