Zed’s Restaurant In Austin Welcomes Chef Jacob Hilbert

With a cool breeze blowing and calming live music in the background, guests made their way to their seats for a Very Special Dinner hosted by Zed’s Restaurant’s new chef, Chef Jacob Hilbert.

At the conclusion of the meal, Chef Hilbert emerged to a round of applause and overwhelmingly positive feedback. Chef Hilbert also had the opportunity to share some of his personal experiences with the group. He brings almost 20 years of experience from working in kitchens in New York City and North Carolina to Zed’s. In the time he has been at Zed’s, he has taken the menu, and made it his own, playing off of some of his favorite flavors.

The refined, five-course dinner had influences from Texas and the American South and the featured menus had a nice variety of flavor. Chef Hilbert presented two menus for guests to choose from. One of them was especially for his vegetarian guests. From Bang Bang Shrimp to Texas Goat Cheese and Mushroom Risotto to Lamb Shank Redemption, as each course arrived, guests anticipated hearing about the dishes from the waiters before digging in. The five-course feast ended on a perfect note with a Chocolate Peanut Butter Torte.

One of my favorite dishes was the Texas Goat Cheese appetizer. It was such a refreshing twist on something so simple and light.

Talking with other diners, I found that two dishes were definitely crowd favorites. They were the Salmon and Grits and the BB Quack. The Salmon and Grits dish was cooked perfectly, and the BB Quack was a delicious duck in perfect house-made sauce with the best beans on the side.

Paired with the meal, there were wine selections, provided by Becker Vineyard’s in Stonewall, Texas, from both Hilbert and Zed’s General Manager, Laura Josselson.

From the walk up to the restaurant to the beautiful surroundings and amazing service, Zed’s is definitely an amazing experience to share with friends and family.
