Spandana Singh better known as Spandi, is a high school senior who has an avid passion for journalism. Originally from India, she has so far lived in countries like Kenya, Italy, Ethiopia, The United States and Indonesia and looks forward to living in many more.

While not busy with the IB Program, Spandi loves to play the piano, dance, explore new cultures (especially their cuisines) and spend time with her friends and her two turtles.

As she gets older she hopes to pursue a double major in international relations and journalism and by the time she is thirty wants to have lived in every continent in the world, (except for Antarctica).

Red Bamboo Vegetarian Restaurant In New York City

Being a vegetarian, I always experience some blue moments when I realize that I cannot eat certain things that once engrossed my tongue in zest. But New York City, being the accommodating and fulfilling city it is combated this problem by creating Red Bamboo, a lush vegetarian oasis amidst a desert of carnivores.

The dishes there are specifically created to be healthy and fully vegetarian or vegan. The restaurant is well equipped with an assortment of fake soy meats that are created to taste like the foods you have been craving for so long. The atmosphere of the restaurant is calming and the staff there is more than ready to help accommodate you.

The variety of cuisines available there is thrilling. You can enjoy a plate of traditional spaghetti and meatballs (my favorite), Caribbean Jerk Spiced Seitan and Bamboo Nuggets and enjoy choosing from a variety of fajitas, noodles, dumplings that exhibit the cultural diversity of New York City through delicious food. And while there don’t forget to try some of the sinful vegan brownie bottom cheesecake and some of the delicious Oreo cookie cheesecake. You won’t regret it. And in case you can’t make it to the restaurant don’t worry, they deliver! Red Bamboo is there to take away your blues.
