With summer season treasures still bountiful, adding a light salad dressing is all that is needed. A fresh dressing to liven crisp vegetables.
Lemon Dijon Dressing:
This dressing is great over salad greens, or avocado and grapefruit cut into bite size pieces. The acidity of the lemon keeps the avocado green, and the mustard acts as an emulsifier to thicken the dressing.
- 1/3 cup lemon juice
- 1 tablespoon Dijon mustard
- 1/2 cup olive oil
Whisk first two ingredients together. Slowly add in oil. Salt and pepper to taste. Spoon over salad of your choice.
