Breakfast At Eques At The Hyatt Regency Bellevue

Stop by the Hyatt Regency Bellevue for a yummy morning bite and you’re sure to be impressed. Eques, the hotel’s designated breakfast spot, has a new home as of this spring with a refreshed menu, in part due to the Hyatt’s “Thoughtfully Sourced, Carefully Served” global initiative, which focuses on providing healthier, more sustainable and locally sourced food options to guests.

Located on the second floor of the Wintergarden atrium, the 129-seat restaurant is headed up by Executive Chef Greg Kurtz, who’s developed a menu that focuses on fresh and familiar breakfast options that highlight the bold, natural flavors of Pacific Northwest ingredients.

Debut menu items include Signature Eggs Benedict served three ways: with shaved prosciutto and citrus cream (my favorite), locally smoked salmon and dill cream, or Alaskan Dungeness crab and caper cream; Honeycrisp Apple Stuffed French Toast with spiced mascarpone, caramel, vanilla bean crème and candied walnuts; and the gluten-free “425” Pork & Eggswhich includes pork shoulder braised for seven hours, served with two cage-free eggs, roasted green tomatoes, avocado and house potatoes. Better yet? Guests can top off their breakfast with Torrefazione Italia® coffee, a Bloody Mary or Mimosa for just $3.

“The menu at Eques incorporates classic breakfast favorites with a Pacific Northwest spin, balancing healthy yet satisfying options with a few early morning indulgences,” said Kurtz. “We’ve taken the flavors found in the most crave-worthy comfort foods and inspiration from all of our fantastic local ingredients, for a menu that truly reflects our community’s signature taste.”

In the afternoons and evenings, Eques functions as a multi-purpose space, which can be booked for lunch banquets as a fabulous alternative to a traditional meeting room. The prearranged dining area can also serve as a private reception and catering venue for weddings and other specialty events.
