Everybody needs an easy marinade to have on hand this summer. Here is Rancho La Puerta’s Saturday Marinade, which is perfect for grilling onions, zucchini, peppers, eggplant, corn and poultry.

Ingredients:

1 ounce extra virgin olive oil
1 medium shallot, diced
2 cloves minced garlic
1 Tbsp fresh oregano or 1 tsp dried
1 Tbsp fresh basil or 1 tsp dried
1 Tbsp fresh rosemary or 1 tsp dried
10 ounces soy or tamari sauce (you can also substitute coconut amino’s, a soy sauce alternative)
ground black pepper (I prefer cayenne for more kick)
