Lemon Cake Mix Cookie Recipe

There’s nothing like a little lemon to brighten the day. That’s why this recipe from the food blog Half Assed Kitchen  for lemon cake mix cookies has been a staple in my sweet treat collection.  It’s sweet, simple and oh-so-spring perfect; I love baking these cookies.

What You’ll Need:

1 box lemon cake mix

2 eggs

½ cup unsalted butter at room temperature

1 tsp. grated lemon peel

1 cup powered sugar


First mix together the wet ingredients (eggs and butter) until you have a smooth creamy mixture. Next add the lemon cake mix and grated lemon. Now mix until you have a sticky dough.

Placed covered in the fridge for about 30 minutes.

Preheat oven to 350 degrees.

Roll the dough into tablespoon size cookies. Roll around in the powdered sugar until they’re nicely dusted. Place evenly on a lightly greased cookie sheet about two inches apart. Cook for 10-12 minutes or until a golden brown on the edges.


The cookies come out chewy, sweet and just enough tart to remind you of citrus. A friend suggests adding crushed lemon heads candy to the recipe for an extra crunch.

Of course, you can also use different cake mixes for completely different flavors too.

Here’s an easy way to make the cookies even sweeter, spread vanilla butter cream frosting on the bottom of one cookie and top with another for your very own lemon oreo!

Finally squeeze that leftover (but grated) lemon onto a salad for a healthy dressing or mix with olive oil for a citrus addition to any dish.
