Shawna Nadelman is a Gemini vegetarian who enjoys long walks on the beach and curling up on the couch to take in the latest episode of, well anything on Bravo. The staff at Trader Joe’s (the Encinitas location) know her by name. She can spout off almost any celebrity’s dating history, refer to Friends episodes in daily conversation and would give anything to marry a man like Coach Eric Taylor (of Friday Night Lights). She’s never met a ruffle, oversized flower or horizontal stripe that she didn't love and though her entire wardrobe hails from J.Crew and Anthropologie, she'll never buy an item at full price (momma loves a good sale!). Sure, some may argue she's the whitest gal they know, but (surprise!) she's fluent in Spanish and left a part of her heart in Madrid, Spain after a summer abroad in college. Her family is her everything and she certainly does not deserve her friends. Left to her own devices, she could probably finish off a jar of peanut/almond butter in one sitting. Elizabethan Desserts In Encinitas

From my experience, desserts tend to fall in two categories. There are those that lookexquisite -every detail painstakingly fussed for the sake of aesthetics -but when consumed, the flavors fall flat. And then, there are those confectionery creations that forgo the exterior glamour for the sake of taste -sure they may not be pleasing to th eye, but one bite into their rustic presentation and thoughts of their

outward appearance become the furthest from your mind. Very rarely does a dessert boast both good looks and is a treat for your taste-buds. But the geniuses at Elizabethan Bakery have managed to do just that in every single one of the delightful desserts sold at their quaint location near Sunshine Gardens in Encinitas.

A visit to this nostalgic bakery is like stepping back in time -when things were simpler and where baked goods were handmade with the freshest ingredients. The retro vibe is further cultivated by the employees’ tribute to the 50′s in their throw-back attire. But endearing atmosphere aside, the real reason for the bakery’s mass appeal is the products themselves. Not only are they beautiful in appearance, but also (and more importantly) unbelievably scrumptious. And after a glimpse at their cornucopia of confectionary delights,  it’s easy to why this hidden gem won’t stay hidden for long!

While the bakers at Elizabethan provide customers with custom cakes and cupcakes in a variety of tastes ranging from the traditional fruit flavors of strawberry and lemon to more exotic combinations such as the Hummingbird (made with spice cake, cream cheese frosting, fresh bananas, pineapple and pecans) and Chocolate Peanut Butter Praline Crunch, they also specialize in comfort food-inspired desserts like St. Louis Gooey Butter Cake and my father’s personal favorite, Magic Bars. There is truly something to satisfy each and every sweet tooth. And with wedding season right around the corner, it’s important to note that Elizabethan Bakery can also be a valuable source for brides and grooms looking to entrust a bakery with what may seemingly be the most important cake of their lives.

So feed (literally) your need for nostalgia with a trip to Elizabethan Bakery. If the adorable decor and atmosphere don’t win you over, the taste and quality of their products certainly will.
