Danny Gabriner’s Sour Flour at La Victoria Bakery

I recently learned about Sour Flour, a great little company that works out of La Victoria Bakery in the Mission of San Francisco, and needed to share it with Miss A readers interested in baking classes, great loaves of bread or free fresh bagels.

Danny Gabriner created Sour Flour after deciding to leave his programming job at CNET.com, and experimenting with some baking at home. He made the Sour Flour Loaf of natural and simple ingredients (water, flour and salt), and gave his first 1,000 loaves of bread away free to anyone interested in his bakery. Gabriner discovered that his generosity created a wonderful community partnership. Many neighbors became collaborators or volunteers for the Sour Flour cause.

The outcome of giving away free bread was so positive that Gabriner wanted to continue this as part of his bakery’s mission. Unfortunately, loaves of bread were a bit pricey to make for free handouts. So, he decided to give away free bagels, which only cost 25 cents each to make. Sour Flour gives away bagels of an assortment of flavors every Monday at La Victoria Bakery from 9:00 a.m. until 3:00 p.m. as part of Gabriner’s community outreach mission. This has become known as  Bagel Monday.

Another way Sour Flour focuses on community outreach, is through workshops at La Victoria Bakery. They have a Starter Workshop where you the learn basics of bread making by creating your starter, a Dough Development class where instruction is given on how to make and care for your dough, and a Bagel Making class. They also have a mother-daughter baking workshop that sounds adorable. Classes cost approximately $80.

La Victoria Bakery is calm and sunny, and the staff kindly welcomed me. I was a bit early for my bagels, so I looked at the yummy pastries and other goods the bakery had on display, such as some gluten-free varieties. At 9:00 a.m., Gabriner brought out a sheet of bagels and told me all about the various flavors. I highly recommend both Sour Flour and La Victoria Bakery.
