Chocolate Waffles with Caramel Sauce

This Valentines day, the easiest way to your sweetie’s heart may be easier than you think.  Just whip up a batch of home-made chocolate waffles and drizzle on gooey, sweet caramel sauce made by Somebody’s Mother’s Sauces.  These no-nonsense sauces, made by Mother of three, Lynn Lasher of Houston TX, are fantastic because they are made with honest ingredients and taste so good!  Somebody’s Mother’s also makes old-fashioned chocolate sauce that, in their words, “can be eaten warm over ice cream, at room temperature fastened to fruit, or cold straight out of the jar.”  All I know is, one taste and I was in love.

Chocolate Waffles with Caramel Sauce and Cherries

Makes 8 waffles. Active Time: 25 minutes. Total Time: 25 minutes. To make Ahead: Left-over waffles can be cooled on a cooling rack and stored in a re-sealable freezer bag in the freezer for up to 1 week.  Reheat in toaster oven.

1 cup all-purpose flour

1 cup whole-wheat pastry flour

1/3 cup cocoa, sifted

3 tablespoons sugar

2 teaspoons baking powder, sifted

¼ teaspoon salt

3 eggs, whites and yolks separated

¼ cup oil

2 teaspoons vanilla

1 1/3 cup non-fat milk

1 tablespoon corn syrup

¼ cup mini chocolate chips

½ cup purchased caramel sauce, such as Somebody’s Mother’s Caramel Sauce, warmed

½ cup dried cherries or ½ pint fresh raspberries

  1. Preheat waffle iron. Preheat oven to 250 degrees F. Place a cookie/ cake cooling rack on a large baking sheet.
  2. Whisk all-purpose flour, pastry flour, cocoa, sugar, baking powder and salt in a large bowl. Whisk egg yolks, oil and vanilla in a medium bowl. Whisk in milk.
  3. Beat egg whites in a clean bowl with an electric mixer on high until foamy peaks form.  Gradually drizzle in corn syrup while continuing to beat until soft peaks form, about 1 minute.
  4. Stir milk mixture into the flour mixture. Stir about 1/3 of the egg white mixture into the batter.  Gently fold the remaining egg whites into the batter until just incorporated. Gently fold in chocolate chips.
  5. Coat waffle iron with cooking spray. Cook according to manufacturer’s instruction in batches until all the waffle batter is used.  Keep waffles warm on the prepared cooling rack in the warm oven while cooking all of the waffles.
  6. Serve waffles with the sauce and cherries or raspberries.

    Omigosh, I can’t wait to try this! From the sumptuous waffle recipe to the Somebody’s Mother’s topping (I ordered the caramel!) I am going to make this for Valentine’s weekend (three couples, we rented a wonderful cottage at Big Bear – can’t wait!!). Thank you for a great contribution to our getaway!
