Mississippi Pecan Pie
A friend shared this recipe with me when we lived in Memphis. This is the best Pecan Pie recipe I’ve tried. It’s from a beautiful Southern Belle who grew up on a farm in Mississippi. Here is her recipe:
1 ¼ cup dark corn syrup
1 cup sugar (I reduce it to ½ a cup)
4 whole eggs
4 T melted butter
2 ¼ cup chopped pecans
1 tsp vanilla extract
2 T dark rum
1 pie crust
Preheat oven to 350 degrees
Combine the corn syrup and sugar in a saucepan and bring to a boil. Cook, stir, until sugar is dissolved.
Beat the eggs and gradually add the syrup while beating.
Add the remaining ingredients.
Pour in pie shell.
Bake 50 minutes to 1 hour, until pie is set.
