Chocolate Mousse
My favorite dessert is chocolate anything! This mousse is absolutely delicious and easy to make. Buy the best chocolate and butter you can find. It does make a difference. I serve it in little cups with lids. The spoons should be demitasse. I found 12 for $17.95 at 1-800-expresso.com. They are 4 ½ inches long. Perfect!
4 egg yolks
2/3 cup sugar
¼ cup orange liqueur
6 ounces of semisweet chocolate
4 Tb strong coffee
6 ounces of butter
4 egg whites
Pinch of salt
1Tb sugar
Beat yolks and sugar until thick and pale yellow.
Beat in liqueur
Set bowl over hot water ( not quite simmering) and beat for 4 minutes.
Beat over cold water until cooled off.
It should be the consistency of mayonnaise.
Melt chocolate over hot water, add coffee. Beat in butter until smooth.
Beat chocolate into yolks and sugar.
Beat egg whites and salt until soft peaks are formed. Sprinkle with sugar and beat until stiff.
Fold two mixtures together.
Turn into serving dishes. And refrigerate for 2 ½ hours. Serve with whipped cream.
